Sixty-Five Dover has officially reached full occupancy, with its final two retail tenants—Baker Bleu and Suupaa—opening to much anticipation. These exciting additions further cement the building’s reputation as a premier destination for businesses and the broader community.
Baker Bleu: A Bigger, Bolder Vision
For renowned artisanal bakery Baker Bleu, this marks their largest location yet. Owners Mike and Mia Russell saw an opportunity they couldn’t pass up. “When this site came along, we couldn’t refuse to do the whole kitchen service every day,” they shared. Designed to cater primarily to office workers, this new outpost is poised to become a must-visit destination in an area Mike describes as “underserviced” when it comes to quality bakeries.
This Melbourne opening emulates the format of Baker Bleu Sydney, which is located within another Fortis development in Double Bay. The expansion highlights the brand’s growing popularity and aligns with Fortis’ commitment to creating vibrant, community-driven spaces.
Suupaa: A Taste of Tokyo in Cremorne
Right next door, the team behind Future Future—one of Richmond’s most beloved restaurants—has introduced a bold new concept to Cremorne: Suupaa (Japanese for “supermarket”). Blending konbini culture (Japan’s take on the convenience store) with a sleek, design-forward dining experience, Suupaa is both a restaurant and retail space.
The interior is a masterclass in contrasts—stainless steel, tiled surfaces, sweeping curves, and mid-century furnishings—a nod to legendary Japanese designer Shiro Kuramata. The result? A space that feels both retro and futuristic, offering a fresh take on casual dining in Melbourne.
Sixty-Five Dover: A Community-Driven Commercial Hub
The arrival of Baker Bleu and Suupaa at Sixty-Five Dover reflects a broader trend: businesses and employees are increasingly drawn to city-fringe locations over traditional CBD office buildings. With best-in-class amenities and a design that prioritises both work and lifestyle, Sixty-Five Dover is setting a new standard for premium commercial spaces.
With these two standout venues now part of the fabric of Sixty-Five Dover, there’s no doubt the building will become an iconic Melbourne destination. We look forward to seeing them thrive within our walls.
